Easy Sweet Potato and Chick Pea Curry

Whole Food Plant Based: Sweet Potato and Chick Pea Curry Most of the times I just cook without following a recipe. I just throw some veggies and some starch together. Because I do not mind if my food is bland, I do not bother to put many species.

But since my family always complains, I decided to use some recipes I had bought some years ago. They were vegetarian and normal recipes which I will be mcDougallising.

I cannot adapt all of them, but I will try.

This one was my first recipe. It put less curry than what the recipe said, because then my kids would not eat it. I also do not enjoy hot foods.

Well my daughter still didn’t try it. But I enjoyed this recipe.
Actually, I prepared it for one evening, but then the family decided they wanted to go to eat out. So, we went to have some Subway’s sandwiches (unfortunately not all compliant) and some smoothies.

I did not eat, since the Subway over here do not have a great variety of vegetables. I just had a lovely fruit smoothie and I was patiently waiting to get back home and have some of my delicious sweet potato and chick pea curry. And, let me tell you, it was delicious.

The next day was Good Friday, so we had this curry for lunch. I prepared some couscous and poured the curry on top.

In my opinion, it was delicious, My son still complained about the spices, and my husband said he enjoyed it.

I would definitely try it again. I still have some left over for tonight. Looking forward to it.

Here is the adapted recipe. The original recipe was not a slow cooker recipe, but what can I say. I love my slow cooker, and if I can do it in there , I will. It is so  convenient. You just need to put all ingredients in one pot and let it cook. In the mean time I can do other things and even leave the house.

McDougall Compliant, Sweet Potato and Chick Pea CurryOkay, here is the promised recipe, simple, but delicious.

Ingredients

  • 3 cups of diced sweet potatoes
  • 1 cup of thinly sliced onion
  • 1 cup of chick peas (or just use 1 can).
  • 1/2 cup of raisins
  • 3 cups of vegetable broth
  • 1 1/2 tsp of cinnamon
  • 1 1/2 tsp of cumin
  • 1/2 tsp of medium curry (but you use your own choice)
  • 3/4 tsp  of ground ginger
  • 1 tsp of salt (optional).

Preparation

Throw everything in slow cooker and let it cook till the sweet potatoes are soft. I cooked it in slow for 2 hours and then I increased it to high for another 2 hours. I apologise,  but I am not very strict with cooking times. I sometimes leave it in the slow cooker for the whole day.
